This bar works in a proportion of 75% an appreciated type of "rare" cocoa, ancient, the Chuncho of Peru, cultivated in the lower areas of the Andes. An excellent product from which Chapon makes this great bar.
In this case, a medium roast is chosen to keep all the fresh flavors of this cocoa and a short conching to express the nuances of this Chuncho cocoa.
It is characterized by a bitterness dominated by notes of caramel and sweet spices to finish with a liquorice finish.
